This LOW CARB Satay Beef Noodle Soup features thick, round, white noodles (Qetoe-style udon), tender beef, and a creamy, spicy peanut broth. A warming keto-friendly twist on a winter comfort classic.

Ingredients

1 pack Qetoe Noodles
- 1 tbsp coconut oil or olive oil
- 200g thinly sliced beef (rump, flank, or scotch fillet)
- 2 garlic cloves, minced
- 1 tsp fresh grated ginger
- 1 tbsp Thai red curry paste or chili paste
- 2 tbsp natural peanut butter (no sugar added)
- 2 cups beef stock
- ½ cup full-fat coconut milk
- 1 tbsp soy sauce or tamari
- 1 tsp lime juice
- Salt to taste
Directions
- Heat oil in a pot. Sear beef strips for 1–2 mins until just browned. Set aside.
- In the same pot, sauté garlic, ginger, and curry paste for 1 min.
- Stir in peanut butter until smooth. Add beef stock + coconut milk.
- Simmer 5–7 mins. Add soy sauce + lime juice.
- Rinse thick Qetoe noodles and add to broth. Return beef to pot. Simmer 2 mins.
- Serve in deep bowls, topped with bok choy, a jammy egg, coriander, and chili oil.
