This Low Carb Pad Thai recipe uses Qetoe Noodles for a guilt-free take on the Thai classic. Packed with flavour from garlic, tamarind, chicken or prawns, and crunchy sprouts — it’s quick, keto-friendly, and totally satisfying.

Ingredients
- 1 pack Qetoe Low Carb Noodles
- 1 egg, lightly beaten
- 100g cooked chicken or prawns
- 1/2 cup bean sprouts
- 2 tbsp spring onion, chopped
- 1 tbsp crushed peanuts (optional)
- 1 tbsp tamarind paste (or 1 tbsp lime juice)
- 1 tbsp fish sauce (or soy sauce for vegetarian)
- 1/2 tsp sweetener (erythritol or monk fruit)
- 1 clove garlic, minced
- 1 tbsp oil (avocado or olive oil)
- Lime wedge to serve
Directions
- Prepare Qetoe noodles as per instructions (rinse or soak in hot water until soft).
- Heat oil in a pan or wok. Add garlic and sauté for 30 seconds.
- Push garlic to the side and pour in the beaten egg. Scramble lightly.
- Add chicken or prawns and toss with the egg.
- Add the Qetoe noodles, tamarind paste, fish sauce, and sweetener. Stir-fry until coated and heated through.
- Toss in bean sprouts and spring onions at the end. Stir briefly.
- Serve with crushed peanuts and a lime wedge.
