Ingredients
- 1 pack Qetoe Low Carb Noodles
- 1 clove garlic, minced
- 1 tbsp oil (vegetable, olive, or avocado)
- 100g cooked chicken, prawns, or tofu
- 1 egg
- 1/2 cup bean sprouts
- 1/4 cup shredded cabbage or chopped greens
- 1 tbsp low sugar tomato sauce
- 1 tbsp soy sauce
- 1/2 tsp chilli paste or sambal (optional)
- Wedge of lime & fried shallots (optional) to serve
Directions
- Prepare Qetoe noodles according to instructions (rinse or soak in hot water until soft).
- Heat oil in a wok or pan over medium heat. Add garlic and sauté until fragrant.
- Add chicken, prawns, or tofu. Cook for 1–2 mins until heated through.
- Push to the side, crack in the egg and scramble gently.
- Add Qetoe noodles, tomato sauce, soy sauce, and chilli paste. Stir-fry to coat.
- Toss in bean sprouts and cabbage. Stir-fry for 1–2 minutes more.
- Serve hot with a lime wedge and optional fried shallots.
