Try this spicy chorizo & tomato penne made with Qetoe low carb pasta. Packed with smoky, rich flavour and only a fraction of the carbs. Perfect for cosy weeknight dinners.

Ingredients
- 1/2 pack Qetoe Penne (100g uncooked = approx. 2 serves)
- 1 chorizo sausage, sliced
- 1/2 brown onion, diced
- 1 garlic clove, minced
- 1 cup diced tomatoes (canned or fresh)
- 1 tbsp tomato paste
- 1/2 tsp chilli flakes (optional)
- 1/4 tsp smoked paprika
- Salt and pepper to taste
- Olive oil for cooking
- Fresh parsley or grated parmesan to serve (optional)
Directions
- Cook the Pasta:
- Add Qetoe Penne to boiling salted water and cook for 5 minutes.
- Then turn off the heat, let it sit in the hot water for 1 more minute, then drain and set aside.
- 💡Taste at 5 mins and adjust for your perfect texture!
- Sauté the Chorizo & Veggies:
- Heat a splash of olive oil in a pan over medium heat. Add sliced chorizo and cook until browned. Toss in onion and garlic, and sauté until soft.
- Make the Sauce:
- Stir in diced tomatoes, tomato paste, chilli flakes, paprika, salt and pepper. Simmer for 5–7 minutes until thickened.
- Add Pasta:
- Toss in the drained Qetoe Penne. Stir gently to coat every piece in that spicy, chorizo-rich sauce.
- Serve:
- Dish up hot with a sprinkle of parsley or parmesan if desired. Optional: Add a side of rocket salad or roasted veg.
