This LOW CARB Pesto Penne with Grilled Chicken is the perfect high-protein lunch. Ready in just 15 minutes using Qetoe pasta! Gluten-free, keto-friendly, and packed with flavour.

Ingredients

1 pack Qetoe Penne
- • 2 tbsp pesto
- • ½ cup halved cherry tomatoes
- • ¼ cup fresh basil leaves
- • 1 tbsp olive oil
- • Salt & pepper to taste
- • 1 small chicken breast
- • Optional: shaved parmesan
Directions
- Season chicken breast with salt, pepper, and olive oil. Grill in a pan or air fryer until golden and cooked through (about 4-5 minutes each side). Let it rest, then slice thinly.
- Add Qetoe Penne to boiling salted water and cook for 5 minutes. Turn off the heat and let sit for 1 more minute. Drain and set aside.
- In a pan, heat olive oil and sauté cherry tomatoes until softened.
- Add the penne and pesto. Stir gently to coat.
- Season with salt and pepper. Plate the pasta, then top with grilled chicken slices, basil, and optional parmesan.
