This LOW CARB Italian Sausage & Tomato Rice Skillet is a one-pan weeknight dinner loaded with flavour. Juicy sausage, veggies, and saucy Qetoe Rice come together for a rich, risotto-style dish that’s keto-friendly, satisfying, and quick to make.

Ingredients

2 packs Qetoe Low Carb Rice
- 1 tbsp olive oil
- 450g Italian sausage (sliced or crumbled)
- 1 small onion, chopped
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (400g) diced tomatoes, with juices
- ½ cup chicken broth or water
- 2 cups baby spinach
- 1 tsp dried oregano
- 1 tsp dried basil
Directions
- Cook Qetoe Rice First:
- Prepare both packs of Qetoe Rice before starting the sauce. To do this, pour boiling water over the rice in a bowl just enough to cover. Place a plate or cover over the bowl and let it steam for 5 minutes. Drain and set aside.
- Brown the Sausage:
- Heat olive oil in a large skillet over medium heat. Add the sausage and cook for 5–7 minutes, until browned and cooked through.
- Sauté the Veggies:
- Add chopped onion, bell pepper, and garlic. Cook for 3–4 minutes until softened and fragrant.
- Simmer the Tomato Sauce:
- Pour in the diced tomatoes and chicken broth. Stir well and simmer uncovered for 5 minutes to reduce slightly.
- Fold in Qetoe Rice:
- Add the pre-cooked Qetoe Rice to the pan. Stir gently to coat the rice in the tomato sauce. Let simmer for 2–3 minutes so the rice soaks up the flavour and thickens slightly.
- Finish with Spinach & Herbs:
- Stir in spinach, oregano, and basil. Let it wilt for about 2 minutes. Serve hot, straight from the pan.
