Try this easy low carb cheesy broccoli rice gratin using Qetoe Low Carb Rice! With just 6.3g net carbs per serve, it's the perfect healthy comfort food for cosy nights.

Ingredients

1 packet Qetoe Low Carb Rice (80g uncooked = ~160g cooked)
- 1 cup chopped broccoli (fresh or frozen)
- 1/2 cup grated cheddar cheese (plus extra for topping)
- 1/4 cup grated parmesan
- 1/2 cup cream (or coconut cream for dairy-free)
- 1/4 cup chicken broth
- 1 tsp garlic powder
- Salt and pepper to taste
- 1 tsp butter or olive oil (optional, for added richness)
Directions
- Cook Qetoe Rice (Absorption Method):
- Pour boiling water over the rice until just covered. Let sit for 5–6 minutes, then fluff with a fork once absorbed. Set aside.
- Cook Broccoli:
- Steam or microwave broccoli until just tender (about 3–4 mins). Drain any excess moisture.
- Make the Gratin Base:
- In a saucepan, heat cream, chicken broth, garlic powder, salt, and pepper. Stir in cheddar and parmesan until melted into a creamy sauce.
- Combine Rice + Broccoli:
- Add the cooked Qetoe Rice and broccoli into the sauce. Stir gently to coat everything in cheesy goodness.
- Bake It:
- Transfer the mixture into a small baking dish or oven-safe bowl. Top with extra cheddar. Bake at 200°C for 15–20 minutes, or until bubbling and golden on top.
