LOW CARB SPICY ITALIAN SAUSAGE & BROCCOLINI FETTUCCINE
Satisfy your pasta cravings with this Spicy Italian Sausage & Broccolini Fettuccine. Made with Qetoe's Low Carb Fettuccine, it's a hearty dish that's low in carbs but high in flavour!

1 packet Qetoe Low Carb Fettuccine

250g spicy Italian sausage, casings removed

150g broccolini, trimmed and chopped

2 cloves garlic, minced

1/2 cup chicken broth

1/2 teaspoon red pepper flakes

2 tablespoons grated Parmesan cheese

Salt and black pepper to taste

Olive oil for sautéing
Directions
In a medium pot, soak the Qetoe Low Carb Fettuccine in boiling water for 5 minutes, then drain and set aside.
In a large skillet, heat a drizzle of olive oil over medium heat. Add the spicy Italian sausage and cook until browned and cooked through, breaking it up with a spatula as it cooks.
Add the minced garlic and red pepper flakes to the skillet, and sauté for 1 minute until fragrant.
Stir in the chopped broccolini and chicken broth, cooking for about 3-4 minutes until the broccolini is tender and the broth has reduced slightly.
Add the drained fettuccine to the skillet, tossing everything together to combine. Season with salt and black pepper to taste.
Sprinkle with grated Parmesan cheese and toss again before serving.
