MEXICAN FIESTA RICE BOWL WITH BEEF

1 packet Qetoe Rice

200g ground beef

1 tablespoon olive oil

1/2 medium onion, diced

2 cloves garlic, minced

1 red bell pepper, diced

1/2 teaspoon chili powder

1/2 teaspoon cumin

1/4 teaspoon paprika

Salt and pepper to taste

1 cup chicken stock

Fresh cilantro for garnish
Directions
In a large frying pan, heat olive oil over medium heat.
Add the diced onion and sauté until translucent, about 3 minutes. Stir in garlic, cooking until fragrant, about 1 minute.
Add the ground beef to the pan, breaking it apart and browning it until fully cooked, around 5 minutes. Season with chili powder, cumin, paprika, salt, and pepper.
Pour in the chicken stock, bringing to a simmer and letting it reduce slightly for about 3-4 minutes.
Stir in the diced bell pepper and simmer until just tender, about 2 minutes more.
Meanwhile, prepare Qetoe Rice by covering it with boiling water and letting it sit for 5 minutes before fluffing with a fork.
Serve the beef mixture over Qetoe Rice and garnish with fresh cilantro.
