This Spicy Sausage & Tomato Rice Bake made with Qetoe Low Carb Rice is a cheesy, satisfying winter dinner with only 7g net carbs. Gluten-free, easy, and packed with flavour.

Ingredients
-
1 pack Qetoe Low Carb Rice
- 1 spicy sausage (e.g. chorizo or hot Italian), sliced
- ½ red onion, diced
- ½ red capsicum, diced
- 1 cup cherry tomatoes, halved
- ½ cup grated cheese (cheddar or mozzarella)
- ¼ tsp dried oregano
- Salt & pepper to taste
- 1 tbsp olive oil
- (Optional: chilli flakes for extra heat)
Directions
- Cook the Qetoe rice:
- Empty contents of 1 Qetoe Rice packet into a bowl. Pour just-boiled water over the rice until just covered. Cover the bowl and let it sit for 5–6 minutes. Fluff with a fork and drain any excess water.
- Sauté the veggies and sausage:
- In a large non-stick pan, heat 1 tbsp olive oil over medium heat. Add onion and capsicum, sauté for 2–3 minutes. Then add sliced sausage and cook until browned. Add cherry tomatoes and stir for another 2 minutes until soft and blistered.
- Mix it up:
- Add the cooked and drained Qetoe rice to the pan. Sprinkle in oregano, season with salt and pepper, and mix everything well so the rice soaks up the spicy tomato sausage flavours.
- Bake:
- Transfer the mixture to a small baking dish. Top with grated cheese. Bake at 180°C (fan) for 10–12 minutes, or until cheese is melted and golden on top.
- Serve & enjoy:
- Let cool slightly before serving. Optional: garnish with a pinch of chilli flakes.
