Craving a plant-powered, saucy fried rice that’s low carb and big on flavour? This LOW CARB Teriyaki Tofu Fried Rice is golden, saucy, and loaded with crispy tofu and edamame — all under 7g net carbs per serve!

Ingredients

2 packs Qetoe Rice
- 200g firm tofu, cut into cubes
- 1/2 cup shelled edamame (fresh or frozen)
- 2 spring onions, chopped
- 1 egg, lightly beaten (optional for extra protein)
- 2 tbsp teriyaki sauce (sugar-free or low carb preferred)
- 1 tbsp soy sauce or tamari
- 1 tbsp olive oil or avocado oil
- 1 tsp sesame oil
- Salt & pepper to taste
Directions
- Prep the rice: Add Qetoe Rice to a bowl, cover with just-boiled water, and let it sit for 5–6 minutes. Drain thoroughly and let it steam off excess moisture for 1–2 minutes.
- 2️⃣ Crisp the tofu: Heat olive oil in a large pan. Add tofu cubes and cook until golden on most sides (about 5–7 mins). Remove and set aside.
- 3️⃣ Cook the egg (optional): In the same pan, add the beaten egg and scramble until just set. Push to one side.
- 4️⃣ Fry the rice: Add drained Qetoe Rice to the pan. Spread it out, let it sit undisturbed for 1–2 mins to develop golden bits. Toss and repeat until lightly browned.
- 5️⃣ Combine: Add tofu, edamame, and spring onions. Pour in teriyaki sauce, soy sauce, and sesame oil. Toss until coated and heated through.
- 6️⃣ Season & serve: Adjust salt and pepper. Serve hot straight from the pan.
