This LOW CARB Spicy Coconut Pork Ramen is everything you want in a comfort dish—rich coconut broth, tender pork, and bouncy low carb noodles. Made in just 30 minutes, it's a winter warmer you'll crave on repeat.

Ingredients
- 1 lb (450g) ground pork
- 2 tbsp toasted sesame oil
- 1 tbsp minced garlic
- 2 tsp fresh ginger, finely grated
- 2 tsp red curry paste
- 2 tsp yellow curry powder
- 1 can (400ml) full-fat coconut milk
- 8 cups chicken stock
- 2 tbsp soy sauce
- 100g shiitake mushrooms, sliced
- 2 baby bok choy, roughly chopped
- 4 green onions, thinly sliced (whites and greens separated)
- ¾ tsp sea salt
- 2 packs Qetoe Low Carb Noodles
- 4 soft-boiled eggs, halved
- Optional: chili flakes & sesame seeds for garnish
Directions
- Sear the Pork:
- Heat a large heavy-bottomed pot over medium-high heat. Add pork and let it cook undisturbed for 4–5 minutes to get golden, crispy edges. Then break up the pork and cook for another 4–5 minutes until browned all over. Transfer to a plate and drain off excess fat.
- Fragrant Base:
- In the same pot, add sesame oil. Once hot, sauté garlic, ginger, and the white part of the green onions for 1 minute until fragrant.
- Build the Broth:
- Stir in curry paste and curry powder. Toast for 30 seconds to release the aroma. Pour in coconut milk, chicken stock, and soy sauce. Add mushrooms, bok choy, remaining green onion greens, and salt. Bring to a boil, then reduce heat to medium-high and simmer 4–5 minutes until veggies are tender.
- Noodles In:
- Add Qetoe noodles and the cooked pork. Simmer gently for another 2–3 minutes until noodles are heated through.
- Serve & Garnish:
- Ladle into bowls. Top each with 2 soft-boiled egg halves, sprinkle with chili flakes and sesame seeds, and enjoy!
