Creamy, fresh, and packed with flavour — this spring pasta salad is made with Qetoe Low Carb Penne, smoked salmon, and dill for the perfect light but satisfying dish. Ideal for lunch, picnics, or a quick spring dinner.

Ingredients

1 pack Qetoe Penne
- 100g smoked salmon, flaked
- 1/2 cup cherry tomatoes, halved
- 1/2 cucumber, diced
- 2 tbsp Greek yogurt
- 1 tbsp olive oil
- 1 tbsp lemon juice
- 1 tbsp fresh dill, chopped
Directions
Cook Qetoe Penne: add pasta to boiling salted water, turn off the heat, and let it sit for 5–6 minutes. Drain, rinse under cold water, and set aside.
In a small bowl, whisk together yogurt, olive oil, and lemon juice to make the dressing.
In a large bowl, combine cooled penne with smoked salmon, tomatoes, cucumber, and dill.
Toss through the dressing until coated. Chill in the fridge or serve straight away.
