Low Carb Antipasto Pasta

 

Serves 2

Cook 10 minutes

 

Low Carb Spaghetti:

1 packet Qetoe Low Carb Spaghetti

½ cup chicken or beef bone broth / stock

2 tbsp extra virgin olive oil

1 onion, diced

2 garlic cloves, crushed

1 large tomato, diced

½ teaspoon paprika

½ cup kalamata olive, pitted

1 cup baby rocket

150g prosciutto, torn

 

To Garnish:

Juice of 1 lemon

½ teaspoon chilli flakes (optional)

2 tbsp fresh oregano leaves

 

  1. Boil pasta in salted water for 3-4 minutes, drain and set aside.
  2. Over high heat, in the same pot add the olive oil and fry the onion and garlic. Next add the tomatoes and paprika and cook a further 3 minutes.
  3. Add the Qetoe Low Carb Spaghetti and pour over the broth/stock. Bring to boil.
  4. Toss through the olives, prosciutto and rocket and squeeze and entire lemon over the spaghetti. Optional to drizzle some more extra virgin olive oil.
  5. Season and serve.
