Low Carb Antipasto Pasta

Cook 10 minutes
Low Carb Spaghetti:
1 packet Qetoe Low Carb Spaghetti
½ cup chicken or beef bone broth / stock
2 tbsp extra virgin olive oil
1 onion, diced
2 garlic cloves, crushed
1 large tomato, diced
½ teaspoon paprika
½ cup kalamata olive, pitted
1 cup baby rocket
150g prosciutto, torn
To Garnish:
Juice of 1 lemon
½ teaspoon chilli flakes (optional)
2 tbsp fresh oregano leaves
- Boil pasta in salted water for 3-4 minutes, drain and set aside.
- Over high heat, in the same pot add the olive oil and fry the onion and garlic. Next add the tomatoes and paprika and cook a further 3 minutes.
- Add the Qetoe Low Carb Spaghetti and pour over the broth/stock. Bring to boil.
- Toss through the olives, prosciutto and rocket and squeeze and entire lemon over the spaghetti. Optional to drizzle some more extra virgin olive oil.
- Season and serve.
