Juicy chicken thighs seared in garlic butter and finished in a creamy spinach and bacon sauce. Pure comfort, completely low carb, and perfect for weeknights. No pasta needed — just big flavour and a silky, rich sauce.
Ingredients
- • 4 chicken thighs, boneless skin-on
- • Salt and pepper
- • 1 tbsp olive oil
- • 2 tbsp butter
- • 3 garlic cloves, minced
- • 2–3 rashers bacon, chopped
- • 1 cup thickened cream
- • 2 cups baby spinach
- • ¼ cup grated parmesan
- • Squeeze of lemon (optional)
Directions
- Season the chicken thighs generously with salt and pepper.
- Heat the olive oil in a pan over medium-high heat. Add chicken skin-side down and cook until crispy and golden, then flip and cook through. Remove and set aside.
- Add the chopped bacon to the same pan and fry until crisp.
- Stir in the butter and garlic, cooking for 30 seconds until fragrant.
- Pour in the cream and stir through the parmesan. Simmer for 2–3 minutes until slightly thickened.
- Add the spinach and let it wilt into the sauce.
- Return the chicken to the pan and spoon the creamy garlic butter sauce over the top. Add a squeeze of lemon to finish if you like.
