Try this quick and easy egg white bites recipe, perfect for a healthy breakfast or snack! Packed with protein, veggies, and cheese, these bites are low-carb and delicious.
Ingredients
- 1 cup egg whites (about 8 large egg whites)
- 1/2 cup diced vegetables (spinach, bell peppers, onions, or your favorites!)
- 1/2 cup shredded cheese (cheddar, feta, or mozzarella work great)
- 1/2 cup cooked meat (optional – try turkey, ham, or crispy bacon)
- Salt and pepper, to taste
- Cooking spray or muffin liners
Directions
- Preheat your oven:
- Set it to 350°F (175°C) and get your muffin tin ready by either lightly spraying it with cooking spray or lining it with muffin liners.
- Whisk those egg whites:
- In a bowl, whisk the egg whites until they’re nice and frothy. Add a pinch of salt and pepper to season.
- Mix in the good stuff:
- Gently fold in the diced veggies, shredded cheese, and cooked meat (if you’re using it). Stir until everything’s evenly spread through the egg whites.
- Fill the muffin tin:
- Pour the mixture into the muffin cups, filling each one about three-quarters full.
- Bake to perfection:
- Pop the tin into your preheated oven and bake for 20-25 minutes. You’ll know they’re ready when the tops are set and lightly golden.
- Cool, then enjoy:
- Let the egg white bites cool in the tin for a few minutes before transferring them to a wire rack. Enjoy them warm, or store them in the fridge for a grab-and-go meal later!
