Grilled Chicken with Tomato Zucchini Salad
Ingredients:
- 2 boneless, skinless chicken breasts
- 1 large zucchini, sliced
- 2 medium tomatoes, diced
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1 clove garlic, minced
- Salt and pepper to taste
- Fresh basil, for garnish
Instructions:
- Prepare the Chicken: Season the chicken breasts with salt and pepper. Grill or pan-sear them over medium heat for 5–7 minutes on each side until cooked through.
- Make the Salad: In a bowl, combine zucchini slices, diced tomatoes, minced garlic, olive oil, balsamic vinegar, and a pinch of salt and pepper.
- Serve: Slice the chicken and plate it alongside the tomato-zucchini salad. Garnish with fresh basil if desired.
